How to cook with a firewall
Hello? Is anyone out there? Don't bother answering, I can't hear you. I'm stuck behind a firewall that won't let me see bloggie. It's very lonely in here, and I miss all my bloggie friends. I also miss the diner, especially the giant spatula and the new range that ev and zorkie bought when we moved to Ferkakta. I think about that range a lot while I eat my cold food. Yesterday I was eating a sandwich and reading Gourmet magazine when inspiration reached out and bonked me on the head.

Sufis in Saudi Arabia
Would a resurgence of Sufism in Saudi Arabia have any effect in promoting tolerance and peace in the Middle East? Can I at least hope?
The centuries-old mawlid, a mainstay of the more spiritual and often mystic Sufi Islam, was until recently viewed as heretical and banned by Saudi Arabia's official religious establishment, the ultraconservative Wahhabis. But a new atmosphere of increased religious tolerance has spurred a resurgence of Sufism and brought the once-underground Sufis and their rituals out in the open.

Analysts and some Sufis partly credit reaction to the Sept. 11, 2001, attacks in the United States for the atmosphere that has made the changes possible. When it was discovered that 15 of the 19 hijackers were Saudi, the kingdom's strict Wahhabi doctrine -- which had banned all other sects and schools of thought -- came under intense scrutiny from inside and outside the country. The newfound tolerance Sufis have come to enjoy is perhaps one of the most concrete outcomes of that shift.

Feta, glorious feta
I have a well-known reputation for being a feta cheese addict - my family doesn't call me zorkettafeta for nothing - and I feel like a traitor to my native country which has exclusive rights to the feta word, but it's time to come clean: I'm not crazy about a lot of the Greek feta cheese and never have been. I've always preferred French feta or Danish feta or even Bulgarian feta sometimes (I know, I oughta be shot) and I think the reason for this is because the non-Greeks don't use goat's milk in their feta. When I'm in Greece, I only buy feta from a few trusted sources who have the peppery, non-goaty kind, but in restaurants, it's almost guaranteed that I'll never eat the feta in the salad on on the sidedishes because it's too goaty and even though I warn the waiter beforehand that I don't like goaty feta and he reassures me it's not goaty at all, guess what: it still stinks of goat.

Anyway, the reason for this rant is because the article says that according to the official Greek guidelines, feta is made from sheep's milk, with not more than 30 percent goat's milk added. Well, I have issues with that too.

First of all, I don't believe that it's only 30 percent goat's milk, the feta I've been exposed to is more like 80 percent goat's milk (or at least it feels like it) and second of all, why do we even need that 30 percent? There is no reason to have goat's milk in feta in this day and age! For that matter, there is no reason to have goats!

I'll stop here for now, I just want to register my vote for a non-goaty feta, is all. It's not too much to ask.

Crime against a child
With incredible sadness, I bring this disgusting piece of news: What is the crime of Nihad … a 6 years old girl?

Daring to walk on the prayer carpet of Moustafa LAZRAK, a “f’qih” and imam … How beautiful is the Religion of Tolerance, Peace and Love …
In Morocco the “f’qih” is an entire institution: it is a sort of imam-teacher in koranical schools, that belongs to public education. In Tétouan a “f’qih”, whose role is to teach Islam, attacked an innocent child of 6 years old. The picture speaks by its own: black eyes, bruises (?? ecchymoses in French), and multiple fractures of the noise. Not to mention the psychological consequences …
The barbarity happened April 19th, at the Sidi Ahmed El Bekkal School. In the afternoon, the school phoned to Fatima, the mother of the little girl, explaining her that her daughter had “fallen”. But when she discovered the state of her daughter, Fatima questioned the persons in charge, who delivered another version of the story.
Moustafa LAZRAK was praying at the beginning of the afternoon, in the classroom, although it was time to begin the class. Entering the room, little Nihad stepped with inadvertency the prayer carpet of the “f’qih”.
The child confirms the facts, and resumes the story. The imam-teacher hits her violently, and she fell on the ground.
The mother was only alerted two hours after the facts. Fatima drove Nihad to the hospital, where the doctors confirmed the gravity of the lesions and traumatisms. The family decided to take legal actions against the apostle of Allah, who also preaches in a mosque.
After this affair, the tongues untied themselves: it wasn’t Moustafa LAZRAK’s first violence against children. He used to beat them a lot; it must have been to convince them of Islam’s benefits.
A person in charge of the Human Rights affirms that the administration of the scholar establishment pressured the children who witnessed the aggression to deny the facts.”
There is no end to evil that men do.
No end to disgrace, no end to cowardice and no end to the pain it brings.
I hope that God will spare this child from further pain.
